Philippians 3:14

"I press on toward the goal to the prize for which God has called me heavenward in Christ Jesus." Philippians 3:14

This is the verse that is the base of our bootcamps along with 1 Corinthians 6:19... This can relate to a lot of areas in our life. What are you pressing on towards?? Or are you even pressing on as God has called you to? We all have a purpose in this life & a big one at that! You are special & God wants to use you in miraculous ways! Everyone's journey is different both physically & spiritually. Wherever you are today press on toward the goals God has placed in your life & remember this life is a journey!

What do you define as success?

So many people define success in what they have or their awards.. however, success is about pressing on daily & never giving up. The only way to fail is to quit!

Today's recipe: BBQ Chicken Thighs & Veggies




Ingredients

  • 3 oz chicken
  • 1 ear of corn
  • 1 cup yams
  • 1 tbsp mango dressing
  • lime
  • 2 tbsp butter
  • 2 tbsp cotija cheese
  • 2 cups romaine lettuce

Preparation

  1. Preheat oven to 450 degrees. Toss thigh in barbeque sauce and let it sit for 30 minutes.
  2. Cube 1 cup of yams, toss in basil, oregano, salt and pepper and extra virgin olive oil. Bake for 20 minutes.
  3. Heat the grill and lightly grill each side for 1 to 2 minutes.
  4. Transfer thighs into the oven for 7 to 10 minutes.
  5. Soften 2 tablespoons of butter and crumble 2 tablespoons of cotija cheese.
  6. Place an ear of corn in in a baking dish, cover with plastic wrap and microwave for 7 to 10 minutes.
  7. Cut a lime and squeeze it into the softened butter, then add salt and pepper. Spread mixture over the corn, and then roll the ear of corn in the crumbled cotija cheese.
  8. Serve with a side salad topped with mango dressing made from 1/2 cup of lite mayo, 1/4 cup of mango juice and 1/4 cup of mango chutney (only use 2 tablespoons).
